Orange Salad

Ingredients:
- 4 large ripe oranges
- 4 oz (115 gr) Sicilian olives
- 2-3 tablespoons extra-virgin olive oil
- 1 medium onion sliced (optional)
- Salt and pepper
Preparation:
- Peel the oranges, removing accurately the white inside skin.
- Cut the oranges in round slices approximately 1/4-inch (5 mm) thick.
- In a large dish arrange the orange slices, the olives and optionally the onion slices.
- Dress with the extra-virgin olive oil, pinch of salt, and pepper freshly ground from the mill.
