Orange Salad

Ingredients:

  • 4 large ripe oranges
  • 4 oz (115 gr) Sicilian olives
  • 2-3 tablespoons extra-virgin olive oil
  • 1 medium onion sliced (optional)
  • Salt and pepper

Preparation:

  • Peel the oranges, removing accurately the white inside skin.
  • Cut the oranges in round slices approximately 1/4-inch (5 mm) thick.
  • In a large dish arrange the orange slices, the olives and optionally the onion slices.
  • Dress with the extra-virgin olive oil, pinch of salt, and pepper freshly ground from the mill.
