No-Bake Crispy Treats
Fun for children to help to prepare and great for holiday gift-giving
Ingredients
- 1 cup honey
- 1 stick butter
- 2 eggs, beaten well
- 2 cups raisins
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 4 1/2 cups crispy rice cereal
- 1 package (7 ounces) flaked coconut
Directions
- In a large saucepan, over low heat, warm honey and butter together until blended.
- Add eggs and raisins.
- Mix well, stirring constantly, until mixture appears creamy.
- Increase heat to bring mixture to a full boil for 1 minute, stirring constantly.
- Remove from heat.
- Add vanilla, salt and cereal, mixing well.
- Allow mixture to cool on a cookie sheet lined with waxed paper.
- When cooled, shape into small balls.
- On another sheet of waxed paper, spread coconut.
- Roll rice balls in coconut until coated.
- Chill in refrigerator before serving.
- Yield: 4 dozen
Chocolate Honey Treats
Ingredients
- 6 ounces Nestle milk chocolate morsels
- 1/4 cup honey
- 1 Tablespoon water
- 3 cups Rice Crispies Cereal
Directions
- Melt all ingredients, except cereal in a small saucepan.
- Stir until smooth.
- Pour chocolate over cereal until well coated.
- Spread into a small baking dish and refrigerate until cool.
Peanut Butter & Honey Sandwich
Ingredients
- peanut butter
- honey
- your favorite bread
- sliced bananas (optional)
- raisins (optional)
- cinnamon (optional)
Directions
- Spread bread with honey first (it will stick to the bread and prevent it from dripping), then the peanut butter.
- Top with sliced bananas, raisins and a dash of cinnamon if desired.
Tomato and Herbs on Toasted French Bread
Ingredients
- 1 pound fresh plum tomatoes, peeled and chopped
- 1/4 cup fresh basil, finely chopped
- 2 garlic cloves, minced
- 1/8 cup fresh oregano, finely chopped
- 1 teaspoon honey
- 1 teaspoon red wine vinegar
- 1 Tablespoon olive oil
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon salt
- 1 French Baguette sliced in 1/2-inch slices
Directions
- Combine all ingredients in a bowl.
- Spoon tomato mixture on the toasted bread and serve.

- Layer yogurt, granola and fresh fruit in parfait glasses. Drizzle with honey. Repeat twice more, ending with a drizzle of honey on top.
- Mix 2 Tbsp. honey with 1/2 cup of sour cream. Pour over a bowl of fresh blueberries or strawberries.
- Mix equal parts honey and peanut butter. Use as a quick sandwich filling or celery topper.
- Mix 2 Tbsp. each honey and dried fruit bits into 1/3 cup cream cheese. Keep it on hand to top bagels and toast.
- Cream 1/2 cup butter with 1/3 to 1/2 cup honey. Add in 1/4 cup blueberries or 1/2 cup ground nuts. Use to top warm scones and quick breads.
